Great article Tim. I would have been that guy too if I were a bio-chemi-what-so. Instead I’m just a regular insubordinate of much less consequence.
I ponder from time to time what I could do to make better foods more accessible. I always say to myself, well, you’d need money to do that.
I’m extremely sensitive to lactose. It’s terrible because nearly everything has some sort of dairy in it.
My mom in law is sensitive to corn. It’s in nearly everything we eat as well.
Our foods are full of shit we don’t need or want and it’s hard for us to do much about it.
I guess it’s a side effect of capitalism? Money above everything else. It’s literally killing us.
